Mozzarella cheese, shredded
About 1 hour before serving: In 12 inch skillet over medium high heat, cook ground beef and onion until meat is browned, about 10 minutes, stirring occasionally. Add tomato sauce and next 7 ingredients; heat to boiling. Reduce heat to low; simmer, uncovered, 10 minutes or until thickened, stirring often. Squeeze out as much liquid as possible from spinach. In bowl with fork, combine spinach and cottage cheese.
Into 13 x 9 inch baking dish, evenly spoon meat mixture; sprinkle with 1/2 of Mozzarella cheese; top with spinach mixture. Sprinkle remaining Mozzarella on top of spinach mixture. Bake in 375 degree oven 25 to 30 minutes until hot and bubbly. Makes 10 servings.
