SHRIMP & RICE 
1 slice of smoked ham, diced
1 c. bell pepper, chopped
1 c. celery, chopped
1 lg. onion, chopped
Cooked rice
6 eggs, scrambled
Shrimp, boiled & cleaned (1 lb. med.-lg.)
Soy sauce

Dice ham and cook in large pot with 2 tablespoons of grease. When ham is cooked, add bell pepper, celery and onion. Cook until vegetables are tender. Add cooked rice. (I usually cook 3 or 4 cups of rice.) Stir well.

In a separate frying pan, scramble 6 eggs in butter. Add scrambled eggs to rice mixture. Also boil shrimp, peel and clean. If you are using large shrimp, cut in half. Add shrimp to rice and egg mixture. Add soy sauce until rice is brown. Add salt and pepper to taste. Simmer on very low heat for about 30 minutes.
