SHRIMP GUMBO 
1 c. flour
1/2 c. oil
1 lg. onion, chopped
1 bell pepper
1 c. plus 1 qt. water
2 c. smoked sausage
3 c. peeled shrimp
Onion tops (chopped)
Salt and pepper to taste
Rice

Make a roux in a black iron pot. Add onions and bell pepper. Cook until wilted. Add about 1 cup of water and the smoked sausage. Cook about 30 minutes. Add shrimp, cook another 20 minutes. Add onion tops. Add one quart of water and bring to a boil. Cook it slowly another 20 minutes. Serve over rice.
