OKRA GUMBO 
Ham or sausage, fried
2 onions, fried a little
2 tbsp. parsley, chopped
1 bunch green onions, cut up
2 pods garlic
2 tbsp. tomato paste or 1 can tomato sauce
2 lbs. okra, cut up
3 lbs. shrimp, oysters or crabs
2 bay leaves
Pinch of thyme

Fry onions a little and add okra. Fry until brown, stirring often on a medium fire. (Do not rush this part of recipe.) Add 2 tablespoons tomato paste or 1 can of tomato sauce. Fry for a short time. Add water to fill pot. Add parsley, green onions, bay leaf, thyme, salt, pepper and garlic. Cook on medium fire for about 1 hour. After cooked, add shrimp, oysters or crabs and cook for 20 to 30 minutes.
