SHRIMP AND OKRA GUMBO 
1/2 c. oil
4 tbsp. flour

Make a dark brown roux with oil and flour.

1/2 c. onions
1/2 c. celery
1/4 c. parsley
1/2 c. bell peppers
1 box frozen okra
1 clove garlic
1 c. tomato bits
3 qts. water

Cook 1 hour and add 2 pounds of shrimp. Let simmer about 30 minutes. Serve with rice and sprinkle with file.
