SWEET POTATO BALLS 
1 c. cooked yams
1/4 c. butter
3/4 c. brown sugar
2 tbsp. milk
1/4 tsp. salt
1/2 tsp. grated lemon peel
8-10 lg. marshmallows
1/2 c. crushed cornflakes
1/2 c. chopped pecans sprinkles

Combine all ingredients except cornflakes and marshmallows. Take approximately 1/4 cup potato mixture and form around marshmallow making a ball. Roll in crushed corn flakes and pecans.

Cook on buttered dish in warm oven (350 degrees) until marshmallows "ooze". You can fix these ahead and can also be frozen until needed. Big hit with kids.
