HOOTENANY CAKE | |
1 pkg. yellow cake mix (pudding free) 1 pkg. vanilla instant pudding 1/2 c. vegetable oil 4 eggs 1 tsp. vanilla 1 pkg. coconut flakes, toasted 1 c. water 1 tsp. baking powder Nut Mix: 1 c. chopped nuts 2 tsp. cinnamon 4 tsp. sugar Toast coconut flakes by putting them in oven on cookie sheet at 350°F and watch carefully - when golden brown remove and set aside. In large bowl add cake mix, instant pudding and toasted coconut flakes, then add rest of ingredients and beat well. Grease bottom (only) of tube pan. Pour in 1/3 of nut mix and then 1/2 of batter, 1/3 or nut mix and rest of batter and ending with nut mix on top. Bake at 350°F for 50 to 60 minutes. Submitted Akeya Drayton |
