SUMMER SQUASH CASSEROLE 
2 lbs. zucchini and/or yellow crook neck squash
1/2 c. onion, chopped
1 can cream of mushroom soup
1 c. sour cream
1 c. carrots, shredded
1 box Stove Top stuffing mix
1/2 c. butter, melted

Slice squashes (unpeeled) about 1/4 inch thick. Submerge in boiling water for 3 minutes; drain. Add onion to squash. Combine soup, sour cream, and seasoning packet from stuffing mix. Pour this over zucchini and shredded carrots and mix well. Mix stuffing mix and melted butter. Pour half of stuffing mixture in 9 x 13 inch pan. Next pour in vegetable mixture. Sprinkle rest of stuffing mixture over top of vegetables. Bake 30 minutes at 350 degrees. This is very good for a gang of people.
