NUTMEG FEATHER CAKE 
1/2 c. shortening
1 1/2 c. sugar
3 eggs
2 c. flour
3/4 tsp. salt
1 tsp. baking powder
2 tsp. nutmeg
1 tsp. baking soda
1/2 tsp. vanilla
1 c. buttermilk

Combine shortening, sugar, and eggs. Beat well. Add all dry ingredients alternately with butter, milk, and vanilla. Mix well. Bake at 350 degrees for 25 minutes in greased loaf pan, 13 x 9. Top with Broiled Coconut Icing.

BROILED COCONUT ICING:

6 tbsp. melted butter
2/3 c. brown sugar
1/4 c. cream
1 c. shredded coconut
1/2 tsp. vanilla

Thoroughly combine over heat. Place on baked cake. Put back in oven until slightly brown and bubbly or place under broiler.
