APPLE - NUT NUTMEG CAKE 
1 3/4 c. flour
1 1/2 tsp. baking soda
1 scant tsp. ground nutmeg
1/2 c. butter, softened
1 2/3 c. granulated sugar
1 tsp. vanilla
2 eggs
1 c. finely chopped walnuts
3 tart cooking apples, peeled, cored, and shredded
2 tbsp. confectioners' sugar

Mix well four, baking soda, and nutmeg; set aside. In large bowl, cream butter, granulated sugar, and vanilla until light. Beat in eggs until light and fluffy. Stir in flour mixture 1/3 at a time, just until blended. Stir in nuts and apples. Spread evenly in greased 13 x 9 x 2 inch baking pan. Bake in preheated 350 degree oven for 40 to 45 minutes or until toothpick inserted in center comes out clean. Carefully cut in rectangles or squares. Cool in pan on rack. Serve warm or cooled with a sprinkle of confectioners sugar, stirred through a strainer.
