SCALLOPED ONIONS 
12 to 14 sm. boiling onions
1 c. diced, cooked celery
4 tbsp. butter
3 tbsp. flour
1 tsp. salt
1/4 tsp. pepper (use white pepper)
1 c. milk
1/2 c. light cream
1/2 c. blanched almonds
1/4 tsp. nutmeg
1/4 c. Parmesan cheese
Paprika

Wash and peel onions. Cook in boiling, salted water until tender. Do this for celery also. Drain. Make cream sauce of next 6 ingredients. Mix all together and place in buttered casserole. Sprinkle with paprika. Bake at 350 degrees until bubbly and brown.

(This has become a traditional favorite at our house for Thanksgiving and Christmas.)
