SCALLOPED ONIONS 
2 lb. sm. white onions
1 c. sharp Cheddar cheese (if mild, use 1 1/2 c.) grated
1/4 c. chopped pimento
1/4 c. parsley flakes
1/2-3/4 c. seasoned bread crumbs sauteed in butter

2 CUPS MEDIUM WHITE SAUCE:

2 c. milk
4 tbsp. butter
4 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper

Prepare onions and boil in salted water. Boil 20 minutes or until soft. Combine the ingredients for the white sauce and cook until well blended. Put onions in greased casserole. Add cheese, pimento and parsley to white sauce and pour over onions. Sprinkle with seasoned bread crumbs and bake at 350 degrees for 15-20 minutes uncovered. Great with a turkey dinner! Serves 8.
