SLIM DOWN CHICKEN SALAD 
1/3 c. cocktail vegetable
1/2 c. cherry tomatoes, cut in half
1 (5 oz.) can chunk white chicken
1/2 c. sliced zucchini squash
1 sm. red onion, sliced
1 tbsp. salad oil
1/2 tsp. honey
1/4 tsp. basil leaves, crushed
1/8 tsp. dry mustard
Generous dash salt
2 c. lettuce, torn in bite-size pieces
Dash pepper

Slim-down chicken salad is a snap to put together and has only 220 calories for 2 1/4 cup serving. It calls for one can of chunk chicken and fresh vegetables. It is tossed with an unusual, tangy, sweet-and-sour dressing, made from vegetable juice. A little salad oil and vinegar and an interesting combination of seasonings also add to its unusual flavoring.

To make dressing, combine first 7 ingredients and shake well. Toss with remaining ingredients. Makes 4 1/2 cups; 2 servings.
