CREAMED ONIONS 
2 lbs. sm. white onions
Water
6 tbsp. butter
3 tbsp. all-purpose flour
1 1/2 c. milk
1/4 tsp. salt
Paprika to taste

Peel onions, leaving a little of the root ends to help hold shape while cooking. In saucepan over high heat in about 1 inch boiling water, heat onions to boiling. Reduce heat to low; cover (let simmer 10 to 15 minutes) until onions are tender. Meanwhile in another saucepan over medium heat, melt butter. Stir in flour until smooth, slowly stir in milk and salt. Cook, stirring constantly, until sauce thickens. Drain onions; place in serving dish. Pour sauce over top and mix slightly to coat all onions. Sprinkle with a little paprika. An excellent dish to serve with Thanksgiving dinner!
