CREAMED ONIONS 
4 1/2 lb. sm. white onions
4 c. water, cream sauce
1/2 c. all-purpose flour
2 c. half & half
2 c. milk
1 c. shredded Cheddar cheese (4 oz.)
1 1/2 tsp. salt
1/4 tsp. ground nutmeg
1/8 tsp. ground red pepper
Dash paprika
2 tbsp. crushed saltines

1. Lightly grease a 13 x 9 inch baking dish.

2. Bring onions and water to boil. Cover reduce heat and simmer 45-50 minutes; drain well.

3. Cream Sauce: Melt butter in medium saucepan. Whisk in flour until blended. Gradually add half & half and milk. Simmer 3 or 4 minutes, whisking often. Remove from heat. Whisk in cheese until melted. Add salt, nutmeg and pepper.

4. Put onions in baking dish. Pour cream sauce over top and sprinkle with cracker crumbs and paprika.

5. Bake at 350 degrees for 25 minutes. Serves 12.
