SWEET SPICED CORN BREAD 
1 1/2 c. unbleached flour
1 tbsp. baking powder
1/2 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
2 c. cornmeal
1/2 c. raisins
4 eggs
1/2 c. honey or maple syrup
6 tbsp. melted butter
1 c. milk
1 tsp. grated orange rind

Preheat oven to 400 degrees. Sift flour, baking powder, salt, cinnamon and nutmeg. Stir in corn meal. Toss in raisins. In another bowl beat eggs, then melted butter, milk and orange peel; beat to mix. Add corn meal mixture and blend. Bake in large buttered skillet or shallow casserole dish for 30 minutes or until center is set. Great with chili or for breakfast.
