FRIED RICE 
5 c. cooked rice, cooled - cook rather dry
1 c. cooked: (choice) ham, turkey, chicken, pork, shrimp, diced
10 oz. frozen vegetables (carrots and sweet peas), celery
1/4 c. chopped green onion
4 eggs, beat well
1/2 c. oil
1 1/2 tsp. salt

Heat 1/4 cup oil in frying pan. Put ham in and fry for one minute. Add mixed vegetables, stir for a few minutes. Then turn out into a bowl.

Heat another 1/4 cup oil. Fry the onion for a few seconds, then add egg. Stir for one minute or less, add rice, cooked vegetables, ham, salt and mix thoroughly. Serve hot. The above quantity is sufficient for 5 people.
