CINNAMON - APPLE DUTCH BABY 
6 tbsp. butter
2 tsp. cinnamon
1/4 c. brown sugar
2 lg. Gravenstein or Granny Smith apples, thinly sliced
4 eggs
1 c. flour
1 c. milk
Powdered sugar

In a 10-12 inch frying pan (cast iron is good), melt butter and stir in cinnamon and sugar. Add apples. Cook, stirring until apples are translucent, about 5 minutes. Place pan, uncovered, in 425 degree oven while you mix the batter, about 5 minutes.

Mix eggs and flour until smooth. Blend in milk. Pour batter evenly over apples in pan. Bake, uncovered, until pancake is puffy and golden, about 15 minutes. Dust with powdered sugar and let stand about 5 minutes. Cut into wedges.

I have been making this for a couple of years and we have really enjoyed it. This morning I had a lot of fresh peaches so thought I would try subbing them for the apples. Oh my.... I did add a tiny bit of vanilla to the batter. I will be making peach Dutch babies again and again. Thank you!

The batter stayed on top and did not soak under the apples in the pan. The end result was a layer of apples on the bottom and a pancake on top. It tasted great (just like apple pie) but next time I will stir the apples and batter together. Also, in my oven, it took 30 minutes of baking (rather than 15) before the batter cooked. I did make some modifications, however; I did not add any sugar.

I made this this morning as directed with some apples from the free in the backyard. It was the first time I have ever made a Dutch baby and it turned out perfect! It was very simple to make and it was delicious. :D I will definitely make this again.

This is a favorite in our family. I made a few tweaks. I halved the butter. I added 1tsp vanilla to the batter. I used a cinnamon mix (cloves, cinnamon, nutmeg). I used 1 apple and 1 pear. I cooked the apple but not pear prior (it will get too mushy otherwise). I used rice milk as oppose to regular milk because I am lactose intolerant. And, lastly, within the last 5 mins of cooking time, I sprinkled the top with some granulated sugar to give it a sharper appearance.

I made this this weekend - it was incredibly easy and delicious! The only difference is that instead of cooking the butter, sugar, and apples on the stovetop, I just preheated my skillet in the oven, dumped them all in, and then let it bake for 5 mins before I poured the batter over.
