FETTUCINI WITH CLAM SAUCE

1 lb. fettucini noodles
5 slices bacon
3 tbsp. butter
2 (6 1/2 oz.) cans clams
1 1/2 c. cream (heavy or whipping)
1/3 c. Parmesan cheese
Pepper
Garlic
Oregano
Parsley

Add 1 pound fettucini noodles to a pot of vigorously boiling water that has had 1/2 teaspoon salt and approximately 1/4 cup oil added.

1. Prepare 5 slices bacon (I microwave it 6 minutes).

2. Chop 2 large cloves garlic, 1 tablespoon fresh oregano (or 1 tsp. dried), fresh parsley is optional (1 to 2 tablespoons), 3 tablespoons butter, and freshly ground pepper - saute these ingredients for enough time just to melt the butter and very lightly brown the garlic. Add 2 cans minced or whole baby clams. DO NOT SALT. Simmer 5 minutes.

Add 1 1/2 cups cream, whipping or heavy and 1/3 cup Parmesan cheese. Stir. Drain pasta and put it back in the pot. Mix in the sauce and serve with salad and bread. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
