FETTUCCINE ALFREDO I 
4 c. all-purpose flour
1 tsp. salt
4 eggs
2 tsp. olive oil
Water

SAUCE:

1/4 lb. unsalted butter
3/4 c. grated Parmesan cheese
1/2 c. sweet cream
1 egg, lightly beaten

Pasta: Put flour and make a well in center. Put in all other ingredients, except water. Mix well; add water, if needed. Dough will be dry but will moisten as kneaded. Knead for 10 minutes. Cut into 2 or 3 pieces. Let rest for 10 minutes. On floured board, roll out thin. Roll up. Slice roll. Boil in salted water 15 minutes.

Sauce: Melt butter; add cheese, cream, and egg; blend. Add noodles, salt, and pepper. Toss until noodles are coated. Serve on hot plates. Sprinkle with extra Parmesan cheese.
