SCALLOPED CONFETTI CORN 
1 (17 oz.) can cream corn
2 eggs, beaten
6 saltines, crushed
1/4 c. butter, melted
1/4 c. evaporated milk
1 shredded carrot
1/4 c. chopped bell pepper
1 tbsp. chopped celery
1 tbsp. chopped onion (or more)
6 drops Tabasco sauce
1/2 tsp. sugar
1/2 tsp. salt
1/2 c. grated cheese

Preheat oven to 350 degrees. Combine corn and all other ingredients, except cheese. Mix thoroughly and turn into a greased 8 x 8 x 2 inch baking dish. Top with cheese and sprinkle with paprika. Bake for 45 minutes or until mixture is set and top golden brown.
