VEGETABLE CURRY 
2 tbsp. olive oil
1 onion, chopped
1 tsp. cumin
1 tsp. ginger
3 tsp. curry powder
1/2 c. water
2 c. sliced carrots
2 c. green beans, cut 2 inches long
2 c. broccoli
2 c. summer squash, seeded and diced
1 c. sweet red pepper

Cook onion until translucent. Add spices and stir constantly while cooking 1-2 minutes. Add 1/2 cup water and stir. Bring to boil. Add vegetables. Reduce heat. Stir together well. Cover and cook about 5 minutes to desired degree of tenderness. Serve with rice or couscous.
