ZUCCHINI MEXICAL 
1/4 c. oil
4 c. zucchini, unpeeled & sliced
1/2 c. shredded carrots
1/2 c. chopped onion
3/4 c. chopped celery
3/4 c. med. green pepper, chopped
1/2 c. taco sauce
1/2 tsp. garlic salt
2 tsp. prepared mustard
1/2 lb. hamburger, browned

Heat cooking oil; add zucchini, carrots, onion, celery, green pepper and garlic salt; cook covered over medium heat 4-5 minutes. Add browned hamburger. Combine taco sauce and mustard; stir into vegetables; cook 4 minutes and top with shredded mozzarella cheese.
