CURRIED SPINACH SALAD 
2 lbs. fresh spinach
2 red delicious apples, unpeeled
2/3 c. dry roasted peanuts
1/2 c. seedless raisins, plumped in warm water and drained
1/3 c. sliced green onions
2 tbsp. toasted sesame seeds

DRESSING:

1/3 c. white vinegar
3/4 c. salad oil
1/4 c. finely chopped chutney
2 tbsp. sugar
1 tsp. curry powder
1 tsp. salt
1 tsp. dry mustard
3 drops Tabasco sauce

To prepare Salad: Wash and dry spinach; trim and chill. Tear in bite sized pieces. Core and dice apples. Place spinach, apples, peanuts, raisins, green onions, and sesame seeds in a salad bowl.

To prepare Dressing: Combine vinegar, oil, chutney, sugar, curry powder, salt, dry mustard, and Tabasco sauce; mix thoroughly. Toss with salad just before serving.
