CRAB MEAT PATTIES 
1 tbsp. butter
2 tbsp. flour
2 tbsp. grated Parmesan cheese
3/4 c. light cream
1 c. cooked crab meat
1/2 tsp. salt
Dash black pepper
1 egg yolk, beaten
Dash cayenne pepper
48 miniature patty shells

In a saucepan, melt butter over low heat. Add flour and stir until smooth. Add cheese and cream. Cook, stirring constantly, until thickened. Remove from heat. Stir in crab meat, salt, peppers and egg yolk. Spoon into patty shells and broil 3" from source of heat for 3 minutes or until hot. Yield: 48 patties.
