ORANGE RICE PUDDING WITH RAISINS 
2 c. water
1 c. uncooked rice
1 tbsp. sugar
1 tbsp. fresh grated orange peel
1/2 c. raisins, uncooked
1/4 c. fresh orange juice
1 sm. pkg. instant vanilla pudding
1 c. cold milk
2 med. oranges, peeled, cut into bite-size pieces

In large saucepan, combine water, rice, orange peel and sugar, bring to boil. Reduce heat and cook, covered 20 minutes or until liquid is absorbed. May take longer. Be sure rice is tender. Spoon rice mixture into large bowl.

In small saucepan, simmer raisins in orange juice 1 minute. Prepare pudding with milk according to directions. Combine rice mixture and orange pieces. Serve warm or cold. This recipe makes 8 to 10 servings or about 5 cups.
