QUICK RAISIN RICE PUDDING 
3/4 c. packaged precooked rice
1/2 c. seedless raisins
1/4 c. sugar
1/2 tsp. salt
Dash cinnamon
Dash nutmeg
2 c. milk
2 eggs, slightly beaten
1 tsp. vanilla

In saucepan, combine rice, raisins, sugar, salt and spices. Add milk. Cook, stirring constantly until mixture comes to a boil. Remove from heat. Stir small amount of mixture into eggs; return to remaining mixture. Add vanilla and stir a little. Cover tightly. Let stand 45 minutes. Chill if desired, or serve warm.
