KAREN'S OATMEAL COOKIES 
1 1/2 c. brown sugar, firmly packed
3/4 c. butter, melted
1/3 c. milk, mixed with 3/4 tsp. lemon juice
3/4 tsp. vanilla
1 1/2 c. flour
3/4 tsp. baking soda
1/2 tsp. salt
3 c. oatmeal

Heat oven to 375 degrees. Stir brown sugar, melted butter, milk mixture and vanilla in a large bowl until smooth. Stir in flour, soda and salt, then the oatmeal until blended. Let stand 5 minutes for oatmeal to absorb liquid.

Roll into 1-inch balls and place 2 1/2 inches apart on cookie sheet. Flatten each ball by pressing with bottom of glass dipped in cold water. Bake approximately 9 minutes.
