OATMEAL-FRUIT COOKIES 
3/4 c. butter
1 c. firmly packed brown sugar
1/2 c. white sugar
2 eggs
1 tbsp. grated lemon peel
1 tsp. vanilla
1 1/2 c. plain flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3 c. (uncooked) quick cooking oatmeal
1 (8 oz.) container dried mixed fruit, chopped in sm. pieces
1 c. chopped walnuts
1 c. raisins or chopped dates (whichever you like)

Place butter, brown and white sugars, eggs, lemon peel and vanilla in bowl. Mix 2 minutes.

Sift dry ingredients together. Gradually add to sugar mixture. Beat about 1 minute. Add oatmeal. Beat again. When well blended, add chopped dried fruits, raisins or chopped dates and nuts. Stir. Batter will be very thick. Drop by teaspoons on greased pan. (Or, roll in small balls about the size of a walnut and put on pan.) Bake at 375 degrees for 12 to 15 minutes. Makes about 50 cookies.
