OATMEAL COOKIE MIX | |
3 c. sifted all purpose flour 2 1/2 c. sugar 1 tsp. baking soda 1 tsp. baking powder 2 tsp. salt 1 c. vegetable shortening 3 c. rolled oats (When you want fresh cookies fast, you're ahead of the game when you start with this easy mix. Makes 8 dozen cookies). Sift flour, sugar, baking soda, baking powder and salt into medium size bowl. Cut in shortening until mix resembles cornmeal. Stir in oats until well combined. Store tightly covered container at room temperature. To make 2 to 2 1/2 dozen cookies: Place 2 cups mix in medium size bowl; combine 1 egg, 1 tablespoon milk and 1 teaspoon vanilla in small cup. Stir into mix. Drop by teaspoonfuls onto greased cookie sheet. Bake in a moderate oven (375 degrees) for 12 to 15 minutes or until golden. Remove to wire racks to cool. Note: Variations can be made by stirring in 1/2 cup chopped nuts or 1/2 cup chopped dates or 1/2 cup raisins. |
