ITALIAN MINESTRONE SOUP/WITH
TORTELLINI
 
1 lb. sweet Italian sausage
onion and garlic powder
3 cans chicken broth (can be fat-free)
1 can tomato sauce
1 large can tomatoes with Italian herbs and garlic, diced
1 tsp. oregano (plus a little extra)
1 tsp. basil (plus a little extra)
1 tsp. salt (plus a little extra)
1 bag frozen vegetables, Fiesta is good, or corn, carrots, beans, or whatever
Tortellini

Saute sausage and add onion and garlic powder. In dutch oven, add chicken broth, tomato sauce, canned tomatoes, seasonings and vegetables. Add sausage and simmer all for about 45 minutes to an hour. Add tortellini and cook for another 10 to 15 minutes.
