CZECHOSLOVAKIAN POTATO SOUP 
1 med. onion, peeled and chopped
1 med. carrot, scraped and diced
1 c. diced celery
2 tbsp. fresh parsley, chopped
4 c. water
Salt and pepper to taste
5 med. potatoes, peeled and chopped
1/2 c. chopped mushrooms
1/4 c. dried marjoram
2 tbsp. flour
3 tbsp. butter

Put onion, carrot, celery, parsley, and 4 cups of water in a large saucepan; bring to a boil. Season with salt and pepper. Lower heat and cook, covered, for 15 minutes. Add potatoes, mushrooms, and marjoram; continue to cook until potatoes are tender, about 30 minutes. Combine flour and butter; stir into soup. Cook, stirring, for 5 minutes. Makes 4 servings.
