SCRAMBLED EGGS AND SAUSAGE 
1 lb. smoked Polish sausage
2 tbsp. butter
6 to 8 eggs, mixed with a whisk or beaten

Remove skin from sausage. Slice into thin slices, brown in butter on both sides. Pour eggs over sausage slices and heat, stirring until set, but still moist. Top with chopped chives before serving.
