4 eggs 1 1/2 c. sugar 1 tsp. grated lemon rind 1 tsp. vanilla extract 2 c. all-purpose flour 1 1/2 c. butter, melted You will need a Madeleine mold and a pastry bag. Preheat oven to 450°F. Grease mold pan. Combine eggs, sugar and lemon rind in large bowl. Heat in top of double boiler over hot water until warm. Remove from stove and beat at high speed until fluffy and doubled in size. Add vanilla; fold in flour and then melted butter. Do not use electric mixer after adding flour. Fill pastry bag with plain decorating tube with the batter. Fill molds 2/3 full. Bake 10 minutes or until tops lightly golden in color. Remove from molds immediately. Cookies can be dipped in melted chocolate. |
