SPINACH MADELEINE (SPICY) 
4 tbsp. butter
3 tbsp. flour
2 tbsp. minced onion
3/4 c. evaporated milk
3/4 c. spinach liquid
3/4 tsp. garlic salt
3/4 tsp. celery salt
1 tbsp. Worcestershire sauce
1/2 tsp. cayenne red pepper
3 jars "Old English" cheese
3 pkg. frozen CHOPPED spinach

A non-refrigerated Kraft cheese sold in small jars in the grocery.

Cook and drain spinach, reserving 3/4 cup liquid. Wring spinach out with hands. Melt butter in large saucepan. Add flour and stir to blend. Add onion and cook briefly until golden.

Gradually add milk and spinach liquid, stirring constantly. Add spices and Worcestershire sauce and mix well. Add cheese by heaping teaspoonful, stirring constantly until all is melted.

When cheese sauce is complete add spinach and mix well. Pour into small loaf dish and bake at 325 degrees until piping hot about 20 to 30 minutes.
