STUFFED CRAB OR CRAB CAKES 
1 lb. crab meat, flaked
1 c. bread crumbs
1/2 c. butter
1 large onion, chopped
1/2 c. celery, chopped
3 or 4 garlic cloves, minced
1 small green pepper, chopped
2 eggs, well beaten
1 tbsp. mayonnaise
1 tbsp. mustard
salt and pepper to taste
pinch of sugar
dash of nutmeg
parsley (optional)

Sauté onion, celery, garlic, bell pepper and parsley in butter. Mix crab meat, bread crumbs, eggs, mayonnaise, mustard, salt, pepper, sugar and nutmeg; mix well. Combine sautéed vegetables with crab mixture and thoroughly mix. Put in crab shells or form patties. Dip shells or patties into mixture of egg and milk, then in bread crumbs or fish fry. Drop in hot oil and fry until hot throughout or bake in 400°F oven until brown.
