HOT CHOCOLATE VARIATIONS | |
Preparation time: 10 minutes each. Serves: 4. VIENNESE COCOA: 1/4 c. cocoa 2 to 4 tbsp. granulated sugar 1/8 tsp. salt 1 c. boiling water 3 c. scalded milk 1/2 tsp. each cinnamon & vanilla 1. In saucepan, combine cocoa, sugar and salt. Slowly stir in boiling water and milk. 2. Over medium-low heat, heat until tiny bubbles form. Remove. Add cinnamon and vanilla. Beat until foamy. BRAZILIAN COCOA: 1 oz. chocolate 3 to 4 tbsp. granulated sugar 1/8 tsp. salt 1 c. boiling water 1 1/2 c. each hot milk & hot coffee Nutmeg or mace, to taste 1. In top of double boiler, combine chocolate, sugar and salt. Stir in water. Over simmering water, heat until chocolate is melted. 2. Stir in milk and coffee. Add nutmeg. Top with whipped cream. Sprinkle with instant coffee. FRENCH COCOA: 1/4 c. semi-sweet chocolate 1/4 c. light corn syrup 1/4 c. water 4 c. scalded milk 4 tbsp. orange juice or orange-flavored liqueur 1 c. whipping cream 1. Combine chocolate, corn syrup and water in saucepan. Heat ove low heat until chocolate is melted. Gradually add milk. 2. Remove from heat. Stir in orange juice. Top with whipped cream and grated orange rind. |
