Known as the Pope's favorite apple pie. CRUST: 4 1/2 c. sifted flour 3 1/2 tsp. baking powder 8 tbsp. sugar 1/2 tsp. salt 3/4 lb. butter 4-5 tbsp. sour cream 4 egg yolks, slightly beaten FILLING: 8 apples, peeled & sliced 3/4 c. sugar Several tbsp. water 1/2 tsp. nutmeg 1 tsp. cinnamon 1 tsp. lemon rind Powdered sugar To make the crust, combine flour, baking powder, sugar and salt. Cut in butter. Combine sour cream and egg yolks and add to flour mixture. Knead lightly, form into a ball and chill. For the filling, cook apples with sugar and water until thickened. Add nutmeg, cinnamon and lemon rind. Cool. Divide dough into two parts and between two pieces of wax paper, roll out a bit thicker than for pie crust. Place one part of dough in well greased 8 1/2" x 13 1/2" pan. Fill with apple mixture and cover with remaining dough. Seal edges. Brush top with egg whites. Bake at 375 degrees for 45 minutes or until top is golden. When cool, dust with powdered sugar and cut into squares. Top each square with whipped cream prior to serving if desired, however, it is delicious plain. Too much sweetness in a dish, add a little salt. Too salty, add a little sugar. It works! |
