EASTER SURPRISE BREAD 
1 pkg. yeast
1/4 c. warm water
1 3/4 c. warm milk
8 c. flour
1 c. butter, softened
1 c. sugar
4 eggs
1 tsp. salt
Grated rind of 1/2 a lemon
1/2 c. nuts, chopped
1 c. white raisins
6 hard cooked eggs, colored or plain

Dissolve yeast in warm water. Add the milk and 1 cup of flour; set aside to rise in warm place. Cream butter, sugar, and the eggs, one at a time. Stir well after each egg. Add salt, lemon rind, nuts, raisins, remaining flour, and the yeast. Mix well; turn out on board and knead until dough is smooth and elastic. Form into desired shape, reserving a bit of dough for later use. Place 2 eggs in top of each loaf and cover each with 2 strips of the reserved dough. Let rise in warm place until loaves have doubled in size. Brush tops with egg yolk and bake at 375 degrees about 45 minutes. Makes 3 good size loaves.
