CANADIAN FRENCH BREAD (ROLLS) | |
1 qt. buttermilk 3 or 4 pats butter 1 tbsp. salt 1 tbsp. sugar (or honey) 1 tsp. baking soda 1 pkg. dry yeast 8-9 c. flour Heat buttermilk, butter, salt and sugar. Cool, then add soda and yeast. Add 5 cups flour to make a sponge. For rolls: Let rise; add remaining 3 or 4 cups flour. Knead lightly. Roll out and cut with biscuit cutters. For bread: Knead well until dough is shiny and doesn't stick. Let rise until double. Put in greased pans in loaves. Put rolls on cornmeal spread lightly on a cookie sheet. Bake at 375 degrees until golden. |
