RICE AND CHEESE CASSEROLE 
2 c. rice
3 c. shredded carrots
2 c. grated cheese
2 eggs
1 1/2 tsp. salt
1/4 tsp. pepper
2 tbsp. minced onion
1/2 c. milk

Combine all ingredients; reserve 1/2 cup cheese. Pour into a 1 quart casserole. Sprinkle 1/2 cup cheese on top of rice. Bake at 350 degrees for 30 minutes. Serves 6.
