RICE AND CHEESE CASSEROLE 
4 c. cooked rice, packed
3 c. sour cream
Salt and pepper to taste
Optional, thinly sliced green onions, sliced olives, salsa, etc.
3/4 lb. (12 oz.) cheddar cheese, grated
1 can (4 oz.) jalapeno peppers (2 cans if you aren't serving children or weenies)

Mix together peppers, sour cream, and any optional ingredients. Spread half the rice in the bottom of 2 quart casserole dish. Cover with half of the sour cream. Cover with half of the cheese. Repeat. Bake in 350 degree oven until cheese is bubbly. Optional items can really change this dish. Use your imagination!
