CREAM OF BROCCOLI SOUP 
4 c. chopped broccoli
1/4 c. butter
1/4 c. onion, chopped
1/4 c. celery, chopped
1/4 c. flour
4 c. chicken stock or 4 c. water and 3 bouillon cubes
1/4 c. carrot, diced
1/2 tsp. garlic
Salt
Pepper
2 c. milk or cream
1/2 c. potato, diced
1/2 c. shredded cheddar cheese

Saute onion and celery in butter. Add flour, coating sauteed items. Add rest of ingredients; simmer for approximately 1 hour, until vegetables are cooked. Delicious!

Can substitute cauliflower for broccoli.
