EASTERN SHORE GAZPACHO 
1 (14 oz.) can tomatoes, undrained
1 med. green pepper, chopped
1/2 cucumber, peeled & sliced
1/2 c. onion, chopped
2 tbsp. oil
2 tbsp. wine vinegar
1 tsp. salt
1 tsp. sugar
Tabasco sauce (opt.)
1/2 c. croutons

Mix all ingredients except croutons in a bowl and chill 6 hours. Just before serving, garnish with croutons. Serves 4 to 6.
