CRAB QUICHE 
4 oz. Swiss cheese, shredded (1 c.)
1 unbaked 9 inch pie shell
1 (7 1/2 oz.) can crab meat (drained, flaked and with cartilage removed)
2 green onions, chopped
3 eggs, beaten
1 c. half and half
1/2 tsp. salt
1/2 tsp. grated lemon peel
1/4 tsp. dry mustard
Dash ground mace

Sprinkle cheese evenly over bottom of unbaked pie shell. Top with crab meat and green onion. Combine eggs, half and half, salt, lemon peel, dry mustard and mace. Pour over crab meat. Bake at 325 until set, about 45 minutes. Remove from oven and let stand 10 minutes before serving. Makes 6 servings.
