BANANA MUFFINS 
5 lg. ripe bananas, mashed
1 egg
1/2 tsp. salt
1 tsp. baking soda
1 c. sugar
1 tsp. baking powder
1/4 c. butter, softened
1 c. pecans, chopped
1 1/2 c. flour

Preheat oven to 375 degrees. Mix all ingredients except flour. Gradually add flour, stirring lightly. Pour into greased muffin tins and bake 15 to 20 minutes or until golden brown. Makes 2 dozen.
