STUFFED MUSHROOMS 
12 lg. mushrooms
3 tbsp. butter
1/2 tbsp. onion, finely chopped
1 1/2 tbsp. flour
Chicken stock
Nutmeg
1/2 tsp. parsley, finely chopped
Salt & pepper
Buttered Ritz cracker crumbs
Sharp cheddar cheese, grated
4 to 6 oz. sausage, cooked & crumbled

Crumble sausage meat into frying pan and cook completely, breaking up meat as it cooks. Chop mushroom stems. Cook mushroom stems and onions in butter for 10 minutes. Add flour, some chicken stock, nutmeg, parsley, salt and pepper. Remove from stove and add chopped sausage and grated cheddar cheese. Fill caps. Top with butter cracker crumbs and grated cheese. Bake 15 minutes at 425 degrees.
