MOLASSES APPLESAUCE COOKIES 
1/2 c. shortening
1/2 c. sugar
1/2 c. molasses
1 egg
2 c. sifted flour
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1/2 tsp. cloves
1/2 c. applesauce
1/2 c. raisins
1/2 c. chopped nuts

Cream shortening and sugar together thoroughly. Blend in molasses. Beat in egg. Sift together: flour, soda, salt, cinnamon and cloves. Stir the dry ingredients into the creamed mixture with the applesauce. Stir in raisins and nuts.

Drop by rounded teaspoonfuls on greased cookie sheet. Bake at 375 degrees for 10-12 minutes. This is a really moist cookie that freezes well.

These are quick and bake up nice and soft. I did add an extra half cup of flour to stiffen up the dough a little.
