HOT TAMALE MEATBALLS
3/4 cup cornmeal
4 cups tomato juice, divided
2 tbs ground cumin, divided
3/4 tsp salt divided
2 - 3 cloves garlic, minced
1/4 - 1/2 tsp cayenne pepper
2 tbs chili powder
1/2 lb pork sausage
1/2 lb ground beef

In large bowl, combine 1/3 cup tomato juice, cornmeal, 1 Tbs cumin, 1 Tbs chili powder, 1/4 tsp salt, garlic and cayenne pepper. Add the beef and sausage; mix well. Let set 1/2 hour before shaping into meatballs to let flavors combine. Shape into 1 1/4 inch meatballs. In Dutch oven combine remaining tomato juice, cumin, chili powder, and salt. Bring to boil, add meatballs; cover and simmer for 45 minutes or until meat is no longer pink. Put in Crock-pot to keep warm. Tastes like the real thing.

I really enjoyed this but had to add a little extra salt plus hot peppers to bring it to the taste I crave, because of my health I have to watch my grease intake and salt but if I make it and have them on an occasion, I am allowed to have them, but a full blown tamale recipe for tamales would be great now my doctor recommended I do this only on occasion. I have had 3 strokes and a heart attack and quad by pass surgery but the taste was very close to the taste I have been longing for and if I can only have it on occasion then OK. I was told to pick one day in a week if I stay on diet all other days that I could have one crazy day that I could have one of anything I wanted as long as I was careful. Now careful does not mean 1 pizza (the whole thing) but one slice. Thank you for your recipe input, I think a recipe with the corn meal mix to add the authenic taste to the meat balls would be wonderful, thank you again.
