HOT TAMALE PIE 
4 c. boiling water
1 2/3 c. white corn meal
1 med. onion, chopped
2 tbsp. oil
2 lbs. ground beef
2 tsp. salt
1 tsp. salt
1 c. cold water
1/2 tsp. pepper
1 tbsp. chili powder
1 can tomatoes, mashed

Put water into a large saucepan and bring to a boil. Mix corn meal with cold water and salt. When mixed, add to boiling water and stir constantly. Cook until thickened. Cover and cook over low heat 5 minutes longer.

Put mush on bottom and sides of 9 x 13 pan. Reserve some for the top of tamale pie. Brown onion in oil, then add ground beef, salt, pepper, and cook until meat turns white. Add chili powder and tomatoes and cook until thick. Put into a pan lined with corn meal mush and cover with rest of mush. Bake at 350 degrees 1 hour.

I use this recipe but use yellow cornmeal and add cumin seed to the meat mixture, which gives it a unique taste. It is delicious! My mother was born in 1906 and made this recipe for our family many years.
